One of my favorite appetizers are buffalo cauliflower wings. If you have had them, you know how delicious they are! The only thing about them is that they take forever to make because the process is so extensive. I decided to simplify this appetizer by turning it into a big pan of casserole. Cooking should be enjoyable and making the wings in a different style was a lot more fun for me!

Ingredients:
One large head of cauliflower
1 tbsp tomato paste
1/4 cup nutritional yeast
6 cloves of garlic
1/2 tsp black pepper
1/2 tsp salt (to taste) 1 tsp paprika
1/3 cup chickpea flour
3/4 cup plant milk
1/2 cup + 1/8 buffalo sauce (I used Primal Kitchen)
1 cup breadcrumbs
Parsley
Green onion
1. Grease a large baking pan and preheat the oven to 350 f.
2. Cut up the cauliflower florets in individual pieces and place them into a large bowl.
3. Add in chopped garlic, tomato paste, add the seasoning with 1/2 cup of the breadcrumbs and 1/2 cup of buffalo sauce.
4. Toss everything together and make sure that every piece of cauliflower is coated.
5. Lay the mixture out on the pan and add in 1/2 cup of milk.
6. Bake for 30 minutes and check on it in between. After about 20 minutes, take the dish out and add 1/4 cup milk, 1/8 cup of buffalo sauce, and 1/3 cup flour. At minute 30, you can turn the oven to the "broil" setting and broil for 5-10 minutes so the cauliflower can finish off crispy.
6. After you take the dish out of the oven, top it off with more buffalo sauce (according to taste), green onion, and parsley.
Serve this as an appetizer or as a side dish with any kind of protein and greens.
