Dates are slowly but surely becoming my bff. I only tried them for the first time last year and now I see why they are nature’s candy! They are naturally sweet and can be the base of any baked or not baked good. I love making treats like this to have for the week. This one has a hidden superfood ashwaghanda, and none of my taste testers knew.
A few benefits of ashwaghanda:

Ingredients:
10 medjool dates (for easier digestion, try soaking for a few minutes in water) 1/2 cup shredded coconut flakes
1/4 cup raw cashews, @glendasfarmhouse
1/2 tbsp ashwagandha powder, @omg_superfoods
Optional: dark chocolate for coat, @enjoylifefoods
1. Blend all of the ingredients in a nutribullet or blender until it is all fully broken down. 2. Shape into balls and let them sit in the fridge for about 30 minutes and then coat with the melted chocolate.
Store in the fridge for up to two weeks.
