VEGAN LINGUINE BOLOGNESE

Need an easy 15 minute plant-based meal recipe this week?! There is truly nothing more comforting than a delicious plate of pasta. It's even better when you can make it in under 20 minutes.


Pasta

1/2 onion

6 cloves of garlic

1 jalapeno

@gardein plant-based ground be’f

@fodyfoods vegan bolognese

Linguine, I used @raoshomemade

Fresh parsley


1. Bring some water to a boil and cook your pasta of choice.

2. Chop the garlic, onion, and jalapeño. Cook on low heat with some olive oil.

3. After about 5 minutes, add the ground be’f crumbles and the vegan bolognese. I used the full jar and full bag of the crumbles.

4. Mix everything together and let it cook for about 10 minutes. Garnish this dish with some fresh parsley!


Garlic bread:

One baguette

Minced garlic, @spiceworldinc

Olive oil

Nutritional yeast

Red pepper flakes

Rosemary


1. Cut the baguette in half horizontally.

2. Top it with some minced garlic, and olive oil. Broil on high heat for 5 minutes.

3. When it’s done, top it with nutritional yeast, red pepper flakes, and dried rosemary.


I loved putting this meal together because:

1. It was delicious + not much cooking required

2. The sauce was amazing and had the cleanest ingredients

3. Came out to 6-7 servings so perfect for meal prep! If you want to make a smaller portion, just use everything in half! You can always use the leftover sauce and meat crumbles for a different dish.
